Cable gets pulled through the same voids, notches and chases that have been used since the house was first electrified, and a hundred years of that leaves you with junction boxes in inaccessible places and circuits that do not follow any logic you would choose today.
The practical consequence is that a period rewire takes more planning and more care with finishes than the equivalent job on an estate house. Lath and plaster does not behave like plasterboard. Original floorboards do not go back down the way chipboard does. It is entirely doable, but it should be specified properly rather than started and discovered.
